One more summer season came to an end

And here I am after a really weird summer... Instead of the fact that the weather went crazy and the summer didn't want to leave (so as the hotel guests) the rest of the summer was pretty much awkward for me.

First of all we lost Babis my 5year old rabbit. Those who have been following me through the social media know that this was much of a loss for me.But like everyone says, life goes on, it will always live in our heart, everything happens for a reason etc etc

That was a big shadow at my summer..

Other than that Mr. Big was a huge help.Coming almost every weekend for a visit bringing me tons of good energy and lots of love.

But of course what kept me busy this summer was the preparation of Eriettas christening.
From the invitations to the candy bar, everything was my responsibility and since Ketty, Eriettas mother is a good friend of mine I didn't want to let her down.

I will prepare separate posts for everything with tutorials and step by step instructions. Stay tuned!

Cake pops recipe

My new obsession has a name and is called cake pops. Ok,I adore cupcakes but the new fashion on the streets are the cake pops. I am sure that if you are a Starbucks fan you have probably already seen them there first. Now, it is the coolest and easiest idea ever for great parties and special occasions.
Big's nephew has her nameday a few days ago and since I am here stuck in the island (the season opened a few days ago by the way) I decided to contribute by sending them a pile of cupcakes. The kids loved and so did I preparing them!
There are plenty of ways to make cake pops, here I will share with you the easy non bake recipe!
Enjoy!!

Ingredients
  • Chocolate Cake, prepared (lol)
  • Chocolate Frosting (amount depends on moistness of cake. I used two big spoonfuls.)
  • 2 boxes Premium white chocolate
  • cake pop sticks
  • sprinkles
Instructions
  1. Add cake to a large bowl.
  2. Crumble until it resembles fine crumbs
  3. Add in frosting a little bit at a time until cake is moist and can hold a ball shape, yet still slightly crumbly.
  4. Use your hands to incorporate the frosting into the cake crumbs.
  5. Use a mini ice cream scoop and scoop out two balls of cake mixture.
  6. Roll the mixture into a tight ball and place on a plate.
  7. Repeat until all the cake mixture has been rolled into balls.
  8. Melt 2-4 ounces of white chocolate in the microwave.
  9. Dip the tip of the cake pop sticks into the white chocolate and insert into the cake balls about half-way.
  10. Freeze for about 20 minutes.
  11. Meanwhile prepare all of your decorating supplies.
  12. Melt the remaining chocolate in a large cup. Make sure you have enough chocolate to completely submerge the cake ball.
  13. Remove cake balls from freezer.
  14. Dip cake balls carefully into the chocolate until covered.
  15. Let the excess chocolate drip off. Swirl and tap gently if needed.
  16. Add the sprinkles while the chocolate is still wet. It will harden quickly.
  17. Stick the decorated cake pop into a styrofoam block to finish setting.
  18. Place into the freezer to speed up setting time.
  19. Cover with a clear treat bag & ribbon for gift giving, if desired.
  20. Store in a single layer, in an airtight container.
  21. Enjoy!

A Sunday finding

On a common Sunday escape with Big we decided to have picnic at the forest!Even better idea Big had was to visit the house and the surrounding garden of the former royal family of Greece.

To my big surprise that was a def keeper Sunday walk!

Although the royal mansion and the majority of the buildings weren’t visitable as now they belong to the state and the place is in general pretty abandoned, the nature took care of the gardens that were full of flowers and trees!

The ideal scene not only for a luxurious picnic but also for another Nikon photo shooting! Here I am sharing with you some mine and some old photos I found online just to put your feet even for a while into their royal shoes!Enjoy!
